Carol’s Nectarine Cake

1 ½ cup flour

1 cup raw sugar

¾ tsp. salt

½ tsp. baking soda

2 eggs

½ cup vegetable oil

½ tsp. vanilla

¼ tsp. almond extract

1 ¼ cup frozen nectarine (chopped)

Additional sugar

Mix together flour, sugar, salt and baking soda. Add eggs, oil, vanilla, almond and nectarine. Stir only enough to moisten ingredients. Spoon batter into either muffin cups or into loaf pan. Sprinkle with sugar. Bake at 350 degrees for 25-30 minutes for muffins, or 1 hour for loaf pans.
