Chanda’s Banana Bread

1 3/4 cups all-purpose flower
1/4 teaspoon salt
1 teaspoon baking soda
1 1/2 sticks butter, softened
1 1/2 cups granulated sugar
2 eggs
1/4 cup buttermilk *
1 teaspoon vanilla extract
1/2 to 1 cup chopped nuts
1/2 to 1 cut chocolate cips
1 cup well-mashed, overripe bananas

* buttermilk substitute 1/4 cup milk + 1 teaspoon vinegar

1 cup confectioners’ sugar
2 to 3 tablespoons lemon juice (or whatever)

Preheat oven to 350F. Grease and flour two 8 1/2-by-4 1/2-inch loaf pans. Combine flour, salt and baking soda. Cream together butter and granulated sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Add flour mixture and buttermilk alternately. Beat batter for 2 to 3 minutes. Stir in vanilla, nuts, chocolate chips, and bananas. Spoon into loaf pans. Bake about 50 minutes, or until a toothpick inserted in center comes out clean. Cool before adding glaze.
